Gofio is the Canary Island name for flour made from roasted grains (typically wheat or certain varieties of maize). It has been an important ingredient in Canarian cooking for some time, and Canarian emigrants have spread its use to the Caribbean (notably in Cuba, Dominican Republic, Puerto Rico and Venezuela).
Gofio is a highly versatile product which can be added to soups, stews, desserts, ice cream or sauces, and it is very rich in vitamins, proteins, fiber and minerals. It is a highly nutritious food many times used for breakfast or snack by cooking it with water or milk.
