Aioli or Ali-Oli is a traditional Catalan Garlic and Oil spread used in many important recipes across Spain.
It goes very well with potatoes, black rice, fish, meat and vegetables. A famous appetizer or side order is the Patatas Alioli, where (basically) diced boiled potatoes are well covered with the alioli sauce. Serve cold.
